Pori Chole

  • flour(maida)=2.5
  • cups Oil=2
  • tablespoons Salt=to taste
  • yogurt(dahi)=2 tablespoon at room temperature
  • Luke warm water(halka garam pani)=for kneading.

  1. Combine flour, salt, yogurt and oil. Then gradually add lukewarm water to make a soft dough. The dough should not be too hard nor too soft.Knead it well for 3 or 4 minutes and then leave it for 10 minutes covered with a damp cloth.
  2. Then after10 minutes knead it again by wetting hands in water for 4 minutes. Then keep the dough covered for 1 or 2 hours for rest.In summers u can keep it in fridge. After that make small balls with the help of luke warm oil.Always use Luke warm oil in making poori. It gives the poori a good texture.Leave the balls for 5 to 10 minutes covered.
  3. Then apply warm oil to a surface and make pooris with the help of rolling pin.Make sure to make equal level of pooris. Then fry it in hot oil and keep pouring hot oil on it with the help of slotted spoon.Do not over cook it will get harder. The temperature of oil should also adjusted to normal i.e not too hot nor too cold.I hope it will help u to make soft pooris. Thanks
