Biryani Recipe

Ingredients:

  • Oil 1/4 Cup
  • Adrak lehsan crushed 3 tbs
  • Mutton 2 kg
  • Sabut kali mirch (Black pepper corns) 1 Tbs
  • Baadiyan ka phool (Star anise) 4-5
  • Darchini (Cinnamon sticks) 2-3
  • Badi elaichi (Black cardamom) 3-4
  • Lal mirch powder (Red chili powder) 3 tbs or to taste
  • Haldee powder (Turmeric powder)1 tbs
  • Garam masala powder 1 tbs
  • Zeera powder (Cumin powder) 1 tbs
  • Dhania powder (Coriander powder) 3 tbs
  • Namak (Salt) 6tsp or to taste
  • kali mirch(black pepper powder)2 tsp
  • Dahi (Yogurt)2 Cup
  • Tamatar (Tomatoes) cut into 4-6 slices 6-7 medium
  • Hari mirch (Green chilies) 4-5 or to taste
  • Aloo Bukhara (Plums) 15-20
  • Hara dhania (Green coriander) handful
  • Podina (Mint leaves) handful
  • lemon juice 3-4 lemons small
  • Chawal (Rice) Basmati sella 2 kg (soaked and boiled with whole spices & salt)
  • vineger(sirka)2 tsp
  • salt to taste
  • chinese salt optional 1 tsp for ric boiling
  • all spices for rice
  • 2 bay leaves
  • 6-8 green cardammoms
  • 2 tsp cummin
  • cloves(long)7-8
  • Aloo (Potatoes) boiled and fried 6-8
  • Pyaz (Onion) fried 4 onioins
  • warm milk 1/4 cup
  • Zarda ka rang (Yellow food color) ½ tsp
  • Pyaz (Onion) fried 4 onioins
  • kewra water 1 tsp or kewra essence 3-4 drops
  • melted ghee to be spread on top 2 tbs
